    I updated to the latest version of WordPress (5.8) and when generating the gallery from Gutemberg I could not see the options to make Masonry. I don’t have any other plugins installed that I think might interfere.

    Hello, this only works with the classic gallery either from using the TinyMCE editor (none Gutenberg editor) or by using the classic editor block’s media entry.
