Is that safe to use the previous version of WordPress

Hi guys, can I check with you. Is that safe to use the previous version of WordPress. I hav few WP website with previous version installed and set to auto update when there is a latest security release (eg. 3.7 and updated to 3.7.22, 3.8 and updated to 3.8.22 & ect). I do not want update to the latest version as some plugins and themes may not compatible with 4.8.2. But for all the new WP website development I will use the latest WP version 4.8.2 (current 4.8.2 is the latest version) and I know latest WP version is better and hav latest feature. If the previous version is not safe to use why WP team still release the security fix for version 3.7, 3.8 & etc.

I ask this because my hosting provider keep ask me update to the latest WP version instead when he received a news regarding WordPress having vulnerabilities each time and he say the previous version is not safe to use and must update to the latest version.
