is it possible with “search and replace” to replace a specified value in a table

On our WordPress Site we work with a certain Login Plugin called Pia Register (I think this is not important which one it is in our case). We work with a development and a production environment. So we copy from dev to prod, means for the database we migrate from the dev to prod with your Migrate DB. That functions great. Just in case of Login functions, where our customers register and login on the prod site, we got the problem, that it overwrite our users on the prod site, when we update (that’s clear).
What we need to know, if Migrate DB is able to exclude any data areas (tables) or registered , means Login Plugin and all users?
And second question: is it possible with “search and replace” to replace a specified value in a table, if yes, how? We would change a value of a radio button.In advance many thanks.
