Internal 500 error – days after plugin update

I’m hoping that somebody has come across a similar issue and can offer some advice…
A website that I work on recently ran into the dreaded internal 500 server error. A number of plugins had been updated but the website didn’t go down until 48-60 hours after the plugin updates.
My understanding was that if it was a plugin fault then it would have thrown an error at the time of the update? Has anybody come across this before?
Fortunately our I.T. team was able to restore the site to a version before the plugin updates, but i’m not convinced it was a plugin update that caused the issue.
I would appreciate any advice.
