In product categories, how to display higher-priced products first, by default?

You can also try using the customizer by going to Customizer → WooCommerce → Product Catalog → Default product sorting and then change it to Sort by price (desc).

Just to mention, this will also affect the sorting order on the shop page.

You can find that in WordPress Dashboard > Appearance > Customizer > WooCommerce > Product Catalog > Default product sorting

The customizer can be accessed via WP-Admin → Appearance → Customize.

So, you’ll want to go to WP-Admin → Appearance → Customize → WooCommerce → Product Catalog → Default product sorting.
