Regarding the update failed error that seems like it could be a bug, would you be able to report that here: https://github.com/WordPress/gutenberg/issues? Alternatively I can try and get more information from you, for example what browser are you using or plugins?

When you say categories and tags don’t change, does that mean you can’t interact with them?
