if i disable Woocommerce Payments will my old orders disappear

Disabling WooCommerce Payments won’t remove any past transactions records. The Payments → Transactions view won’t be available while the plugin is disabled, but data will remain on database, and as soon as you re-enable the plugin they’ll be visible once again.

As a side note, please note that on the transactions screen, if you’d like you can download all your transactions records via the download button:

Per the plugin’s documentation, you will continue to be able to access the Deposits, Transactions and Disputes administration screens after WooCommerce Payments is disabled.
