I Want To Reorganize My Blog posts

Hi good people:
Please I want to reorganize my blog posts. I don’t like the way they appear right now. They appear in chronological order, and the blogs open when the site opens. I want the to be organized into lists, and they should only open when they ared clicked on individually. I don’t want them to be organized by dates any longer but by category. Please what can I do.
