So yesterday I reverted one of my sites back to Version 4.6.1

The other 3 newer updates, with each update new problems were created on my site. I am not a developer. The developer of my theme (Paid) is useless and unwilling to help. I have no money to spend on a developer.
That’s a problem for us here as paid theme’s are not supported here. Unless you want recommendations for a free theme that is supported here, there’s not much that we can offer you here.
The only problem with doing this seems to be various vulnerabilities and security issues.

I just want advice as to what I can do to minimize those security dangers and vulnerabilities, now that I will be running outdates versions of plugins and wordpress.

Yes, running the latest version is the right way to go. I don’t know the details about your theme but it hurts users like yourself when themes and plugins are not updated to work with the latest version of WordPress.
The Core Team tries to make patches backwards as well as for the current version when it is security related. You should be good with 4.6.2. That may not always be true but for now you ought to be alright.
Now if 4.6.2 doesn’t work then you’re in real trouble. Let us know if that’s the case or not and we can proceed from there.
]]>It’s fine to disable updates but you really want to stay on top of them. If your site is valuable to you (who’s isn’t?) then it’s really a good idea fo you to learn how to do the following.
You may be already doing these things and that list doesn’t need a developer.
If a theme or plugin isn’t working then you may want to seriously consider switching to a free one that does work.
