I can’t create custom text in the “Paid for order” template

    That isn’t a normal email, it’s created through the German Wocommerce plugin “Germanized for WooCommerce” and not part of core woocommerce. There are no options within this plugin to edit the body text of the Germanized for WooCommerce plugin created emails. You would need to check within the Germanized for WooCommerce plugin itself for how to edit the text.
