    I am currently testing this theme and keep seeing this warning while editing any of the templates:

    It has been discovered that this template does not contain an element set to use the
    HTML tag. Please update a top level group containing the site content to use the main tag in the block settings under Advanced > HTML Element and save the template.

    Any idea how to fix this?

    This is actually an accessibility feature. In Block Themes the main element often lies in your WordPress templates. However, when creating custom site templates, it may happen that no main element is defined, since WP core does not automatically take care of that. This notice is there to make you aware of it. All you have to do is go into your template, select the element that groups the content and add the main tag here.
