How to work with local and remote?

Hello!
Do you have recommendations on how to work with local/remote site?
Of course I’d like only backups from my live remote site and possibly have the plugin disablet on my local setup.I’m using MAMP Virtualhost X and Git/Beanstalk for deployment.
