How to update wordpress without crashing the site?

Hello, I am currently using version 3.51 of WordPress and I would like to upgrade the platform to the newest version because I think it’s affecting some of my SEO (in particular, getting de-indexed for a certain keyword that I used to rank #1 for). Anyway, I know the dangers of simply updating the wordpress platform to the newest version without updating necessary plug ins and backing up your files.
Questions:
1. How do I backup wordpress through my FTP? Would really appreciate a step-by-step guide, and how do I re-instate all these files in case my site gets messed up?
2. What should I do as far as plug ins? Here are my current plug-ins:– add widgets to page version 1.3.2.

– WP Hide Post 1.1.9So basically how do I update to the newest platform without breaking my site and all related plug ins? Would love some feedback. Thanks.
