How to UM extract profile information as part of WooCommerce Order?

I have a process where I use Ultimate Member to collect some further details on a member when they sign up. I get things like Age and Gender, etc. When they place an order, these are important bits of information that I need as part of that order. In Woo, you can click on the member profile, but it shows just the generic information that is provided by WP and Woo and doesn’t include any new fields that were added by UM. I’m looking for suggestions on how to get that full profile detail that I’m collecting in UM (1.3.88 right now).
