How to set different roles when add custom field in profile

Hello,
I have a question, how to change the drop-down list items for adding this extra field to read packets defined by me, not like the default (author, subscriber)?
I need to change it, because I wrote a plugin that works only and exclusively in fields defined as the mine. And I also have a few other plugins that use own custom roles.I attach a screenshot of a list of these elements developed that wants to change.
