How to reply to emails

Settings – “SEND EMAIL” to “ADMIN EMAIL” – this makes NO sense to me.
WHere is the setting to be able to “REPLY” to ALL of the contact forms from the emaill address that was input into the CONTACT FORM? WHY is “ADMIN EMAIL” even an option? PLease help me – my brain does not see how this is even an issue? HOW TO REPLY TO A CONTACT FORM? Right now all REPLIES go straight back to the ADMIN EMAIL? why and WTF? Please help!
