Thanks for your help, but my problem is different. I don`t want to schedule the period of the sale, I want to “Order a product”, so I need the date to verify if I will have the stock of the product on the speficied date.

The only extension that will allow you to limit the number of sales per day will be WooCommerce Bookings, however, it does not integrate with the same stock functionality built into core.

That said, you also use a plugin like Order Delivery that will allow customers to choose a delivery date for the entire order. This can be the date that you choose to ship the items.
