How to override a function in extras.php located in inc folder?

Hello,
I am playing around with the color scheme, and I would like to be able to override certain colors in the function sugarspice_color_scheme, which is located in extras.php in the inc folder.
What is the best way to add this function to my child functions? I’m having difficulty figuring this out since the parent function is not in functions.php (at the root level), but rather in a folder.
