How to organize / categorize blog posts on WordPress

Hello, thank you in advance for clicking. We are developing a new website using Pagelayer (PopularFX).
One thing we’d like to improve is our Blog Posts page which is displayed in our header. Right now it’s automatically updated with each new blog post that’s posted. We found out how to pin posts to the top, but we’d like to improve this further. Once we have hundreds of blog posts, no one will click to page 10 of our blog posts to see some of our best articles.
We’d like more control over what’s displayed. For example we’d like a “New” header, which is automatically updated as it is now. Then a “Travel Guide” header, with 3-4 posts either manually organized or automatically updated via our “Travel Guide” category. Then several other headers/categories.
