How to load all the stores on the map and show the list below?

    If you select the “Show the store list below the map” template on the settings page, and then also enable the “Load locations on page load”, then all locations will show up below the map.

    Is it possible to control the presentation of the list below the map to tighten it up a little? (E.g. select which fields are displayed, remove spacing between address and phone, maybe move some info to a second column?)

    yes,
    you can customize which data will be displayed in the search results
    you can find examples here: https://wpstorelocator.co/documentation/customisations/
    and then you can remove any margins or padding through css
