How to implement day specific recurring orders?

Hi everyone, I have an interesting problem and I’m looking for any pointers on how I can implement a specific feature within woocommerce.
Basically, I want a customer to be able to purchase a product once, but also be able to set up recurring orders which they can choose which days of the week to receive the item on. (Meal plans basically)
i.e A product called “Chips and Gravy” that I want every Monday and Thursday for the next 8 weeks.
I’ve looked at the subscription plugins available (woocommerce subscriptions, sumo subscriptions) etc, and none of them specify any ability to choose which days a user can set subscriptions for, just recurring subscriptions every day, every 3 days, every week etc. The issue here is there is no way to set Monday and Thursday to the recurring days as it’s 3 days and then 4 days between payments.
Can anyone offer any isight into how I may be able to implement such a feature? Thank you very much!
