Well, you can adjust the number of fields in view on the Users screen by clicking on screen options at the upper righthand corner of the all users page. Once you click on the arrow for the screen options it gives you a list of all the fields that you can select to be on the screen at the same time. Check only the boxes that you want to view most often and uncheck the others, that way you don’t have to delete any fields my friend, unless you truly want to.
If you actually want to delete a field go to the Edit New Fields options page and in the first section on the left is the section to delete a field. Just select the field you choose to delete and click the delete new field option, however doing so will loose this data forever, so as stated above, I would just change the screen settings and show only the fields you want to view and that fit neatly onto the page.
