How To Create Custom Routes?

I’ve found this page about extending the rest api but I cannot figure out which folder to add my custom code into. Are there any examples that are a bit more clear?
I’m try to make some routes that manipulate the response a bit before sending the data back via GET (I’m using ajax on my frontend).
