    you can create a private events by changing it’s visibility by clicking on edit at the publish metabox located in the upper right side of the page then to display private events you can used this shortcode [events_list private_only=1] else it will display all events to guest users.

    It raises one more question : how could I choose a custom predefined group of people that’d have access to those events ? By default, I can only choose default groups (like subscribers, authors…). And I’d like to grant people from my associations instead.

    You can choose who has the capability to read private events in your Events > Settings > General > User Capabilities panel.

    The one you want is read_private_events (and maybe read_private_locations)

    If you want groups of people, try using a plugin like Role Scoper to add roles and then assign the relevant permissions in EM.
