One way to confirm emails are sending is to subscribe a second email address of your own to your blog. If you want an email by email confirmation then you might want to consider a mail logging plugin. Google for “WordPress mail log” and the first 2 hist are worth a look.

As for bounced emails, if your notifications are set to come from an email account that exists and tat you actually access you can manually removed bounced addresses. I’m not aware of any more elegant solutions.
