How to change the category on a different date for each post

Hello,
I have two categories:
upcoming events
events
I would like to change upcoming events to events after the event has past.
How do I do this?
Each post has a different expiration date, but they all have upcoming events and events if they are an event of some kind.
I would like to just insert a short-code into the post that says something like:
[postexpirator date=”03/17/2015″ category=”upcoming events” newcategory=”events”]Is this possible?
