How to change text color.

For some reason the default text is white, and my background is white, so I can’t see half of the words on my listings. I know the words are there because when I highlight it, they are there. I am wanting to know how to change the font colors, or make the gray bars appear on all the options. If you could please let me know it would be greatly appreciated!
