How to change default from ([email protected]) to actual senders email?

Two issues I am having…

1. How can I change the incoming email to the actual users email that sent it?
Example: when I open an incoming email (sent from the wordpress contact form) it tells me that the email came from [email protected]
The only way I can tell where the originating email came from is to his the reply button in my email program. Then it will tell me the originating email address. But this is confusing to users in my office that receive these emails.

2. When using the Mail (2) option the incoming email is from [email protected] but when I hit the reply button the originating email once again is from [email protected] and there is no way to find out who actually sent the email. Can this be changed so I can properly respond to the correct email?
