I want my amp to have something like

Instead of
?amp=

Yes, it’s possible to change amp_query_var please check the FAQ section of the documentation link provided which provides examples for the same.

Use this code in your active child theme functions.php file or in a custom plugin.
you can replace mobile with anything your term.
