How to add/use speakers?

Hello,
how can I add (multiple) speakers to an event?
At the moment we’re using the categories for that! First we used the tags but if you add an event in the backend you only see a textfield – so we started to use categories, here you’ll see checkboxes for each speaker (category) when adding a new event. Makes it much easier to select multiple speakers. Also, the single category view is useful so we can display some information of the speaker (category) and also the coming and past events (like here: https://www.pharmacon.de/veranstaltungen/sprecheruebersicht/dr-h-von-der-gathen/ )This solution is working so far. But we can’t sort the list correctly. Because some speakers have a title in front of the name-part, so they go to “D” (Dr.) or to “P” (Prof.).
If we could split the textfield to title, firstname and lastname we could display a sort able table instead of a list: https://www.pharmacon.de/veranstaltungen/sprecheruebersicht/
How can we split the title of categories? Or is there a better solution for using speakers in events (without losing the possibility to get the speakers overview page and speaker-single-views)?
