1. You can add custom fields from Directory Listings->Custom Fields: https://prnt.sc/yz4wtd
All the custom fields added through the site backend will be automatically visible on the fronted add listing form: https://prnt.sc/yz543y You can also assign custom fields within specific categories.

2. As mentioned above, Google ReCAPTCHA is a paid feature. You can check the details here.
