How do you remove the “>>” in categories?

It’s probably your theme’s css defining the ‘bullet’ component. But without a link to look through things I can only guess.

How about a link to your blog so we could see what you’re talking about and offer valid suggestions?

In the style.css file, scroll to the section that says /*Begin Lists..., the third item after that has this:

.entry ul li:before, #sidebar ul ul li:before {
content: "0BB 020";
}

And that would be your culprit.
