What do you think about Product Edit Page > Product data > Inventory > Check – Enable this to only allow one of this item to be bought in a single order?

This will make sure that the quantity field is hidden if you want your customers to only purchase one of that product in a single order.

no, unfortunately this solution does not work.
If you do as you said, then the input field for the quantity of goods disappears in the product card. And you only need to remove the +/- buttons. And the input field should remain.
