Host deleted site, restore with errors

Late last night I was editing posts on my site when I got a 403 error. I went to my hostgator account and even my Cpanel had errors. They determined that all my data had been deleted, including all backups and hostgator files. They restored it but now I can’t update posts.
I can add new blocks, but not modify old ones.
Any update immediately shows the unedited text when saved. I have cleared every cache I could figure out how to, thinking that may be the issue.
An interesting thing is I can have the unsaved, edited version of the post in front of me. Then select it all, and copy it elsewhere and it will paste the original, unmodified version.
When I ran a security scan I got this message: Core WordPress Files Were Modified
We identified that some of your WordPress core files were modified. That might indicate a hack or a broken file on your installation. If you are experiencing other malware issues, please use a Server Side Scanner.None of this happened before the site deletion. I’m at a loss and too new to this to have any idea what to do.
