Highlighting quoted sections of the text when commenting

I’m configuring a couple of CommentPress blogs for upcoming courses, and am trying to duplicate the settings shown in this example:

At that site, when I select “Quote & Comment”, the text that I’m quoting is highlighted — but I don’t see that option in the CommentPress settings. Can you tell me where I might find it?
