Hiding Attributes

You could just hide the “Additional Information” tab on the front end – either site-wide OR per-product. To do that, have a look at https://www.woocommerce.com/products/woocommerce-tab-manager/

As for hiding the whole tab that is not an option because not all the attributes need to be hidden just some.
