help with arclite theme- how to customize Top menus

I have installed arclite theme at https://www.tbs.ac.tz and I want to make it nice, because I am going to use the same theme to more than 9 blogs. Please help:
1. How to customize menus- top navigation
2. How to prevent to display a certain page or category in the menu top navigation.
