HELP ! Variations Showing even when disabled

I have also noticed that when I chose a variation two things do not display

1- The price of the variation is not appearing ( usually the add to cart button moves down and the variation price appears)

2- The SKU number is also not appearing when the variation is chosen from the drop down menu.
But weird enough when i press the add to cart button, the correct variation and price are added to to cart

Which core version of WooCommerce did you update from?

Here is what I think is happening:

There is a cut off at pre-loading 30 variations:

In the front-end, if a variable product has more than 30 variations, the data will be loaded via AJAX rather than handled inline. It is possible to change this quantity using the woocommerce_ajax_variation_threshold filter

As for the additional issues you’ve mentioned, that sounds like it could be specific to your theme. Have you tried changing to another default WordPress theme like Storefront, to see if the behaviour is the same?
