When I change the Publish Status to Draft, the existing page cannot be accessed on the website anymore

That’s the expected behavior. When in draft, it’s NOT published. You cannot have a page/post in both “draft” and “published” status at the same time ??

you can use preview option after editing the published post and then publish it again.
