Have installed the plug-in, but don't see any options?

The plug-in works! Except for the fact that the size of the icon doesn’t change when choosing between ‘medium, thumbnail, large, menu-item’ etc.

For resizing image, selected image size must be largest than menu item image size

Installed 2 days ago via WP control panel, activated, enabled ”image” in screen options but nothing shows up.

Now stable tag is 2.3 and wordpress install to you a stable version. Link goes to dev version.

But my image does not align with the menu, it is placed underneath below the menu links.. how could I line it along with the menu horizontally?

Not in all themes images look normal, you need to use CSS to fix it.
