group article by subjects?

Hi, I read so much stuff around and still I don’t get why is so difficult to organize the articles. What I need is a simple menu with 4-5 titles each one related to a page. Every page should organize articles depending of the related subject of the article. Let’s say I have a page called music and I wrote 5 articles about music. I want these articles to be displayed in that page because is the page which talks about music. My page about cars will contain all the articles about cars and so on..seems so easy to say and to do but I still can’t find a way to organize this things. Maybe do I hve to group them with categories and tags? But how do I say to a page ‘bring just my stuff from that category’?
sounds like the easiest thing to do and I wish it was..
