Google finding random URL’s

I have been moving URL’s around by creating categories and redirecting them with 301 redirect with redirection plugin

I redirected this URL

https://livingunrefined.com/enzymes-definition-and-functions/

to this URL

https://livingunrefined.com/nutrition/nutrition-basics/enzymes-definition-and-functions/

so it follows a structure, but GSC says there is a URL not found

https://livingunrefined.com/enzymes-definition-and-functions/what-is-enzyme/

So the added bit on the end, I don’t know what this is extra bit /what-is-enzyme/ actually is, if you add this to the moved URL it is also coming up with 404 error.

So how to treat this with google? redirect everything after the slash with an *?
