Going live, in stages

I’ve got an e-learning site which is being developed locally and will be completed around May of 2015.
We’d like to begin collecting e-mails ASAP and plan to use a combination of
MiniGo coming soon pages commercial plugin
with MailChimp campaigns.When we finally go live we will use BackupBuddy to move the local production site to the live site.
However, I’m not sure what the best way is to really go about doing this. I assume that all collected addresses will reside on the MailChimp side and that even if we completely overwrite the WP database we’ll still have the same access to those addresses as we did before moving the new site over. We’d just need to connect the campaigns to the new site.
Does it make sense to setup the coming soon site now, on the live server, simply to collect addresses? Then, when we officially go live, completely overwrite everything with the final site?
Or is there a better way?
