It seems it sets our email address (we are the devs) somewhere in the form name on the client site. Google doesn’t like it, I guess because the domain name is not that of the actual site. Is there a way to change that?

you have to set the “from” email address to use an email address with the same domain name as the server. it is under the “advanced” fields under the email notification settings. the “to” email address has to be a different email address, such as your gmail address or another email address with the same domain name as the server. the “reply-to” email address can be set to the person’s email address submitting the form. you can also use tool like wp smtp mail to force the “from” email address and also test emails to make sure they aren’t bounced.

As @wkeithgardner said, the most common issue with Gmail thinking the email is Spam is due to having the To and From names being the same.

You might want to look into adding a SPF record to prevent the spam. https://en.wikipedia.org/wiki/Sender_Policy_Framework
