Getting 500 errors when submitting 4 out of 5 forms

I have a client site with 5 forms. All of these forms were working fine last week. Today, only the simplest form is submitting normally and the other 5 are resulting in 500 errors. The form submissions are being saved and can be accessed from /wp-admin/edit.php?post_type=nf_sub
I’m guessing it’s a server issue of some sort but I’d like some help pinpointing it. Here are the forms if you want to take a look:
