gdpr and ccpa compliant privacy policy – legal issues

I need to create the privacy policy for my website.
The relationship between you and me as your customer is quite obvious for me.
However, I am still not sure what the personal information you get about the clients and users who visit my website with your plugin.
What do you gather it? Нow is it collected , where is it stored and what security given to it and etc..
Do you think you could provide me with the information?
