Gallery in a custom field

What I would like to do is remove from the author the positioning of the gallery. At the moment I am using Wundergallery shortcodes so have a number of parameters I don’t want to trust to the client.

So what I want to do is enable a custom field where all the up-to-date functionality of the WordPress gallery and media management is available but once the gallery was created, I say “thank you” swoop down, take it out of the hands of the author, use PHP to add my parameters and template positioning.

The easiest course at the moment is to write a recipe (basically; go into html view, paste this code, merge it with the gallery you created and put it in the right place in the content). As I see it this is a recipe for client disaster on the principle of if it can go wrong it will go wrong.

I am enjoying custom fields, especially the plug in Advance Custom Fields as it give me much more style control but lets the client do the grunt work.
