functions.php editing itself?

I have a client using a custom theme she got (not from us). Suddenly, her functions.php file keeps rewriting itself, but it’s replacing all the single quotes with the HTML equivilent(')

She’s not editing the file, and overwriting it fixes her blog, but what would cause this to happen all of a suddenly, and like once a day?! Any ideas?
