From email changes en route

Hello:
I have an issue with Contact Form 7 where, despite adding in a particular email into the From field, when the email arrives, it appears from a different address. I’ve linked to two screenshots here:

This is site for a client and I’m wondering if, somehow, an email is being rerouted in their mail system somehow. But that didn’t seem to make sense since I thought the email came straight from the WordPress site.
Has anyone seen this before?
