Spending hours on research, only old entries and articles found about this two issues. They are related.

I got a simple custom field, not ACF field, name 'prefix_departments'. Using %%cf_prefix_departments%% as template tag works on front-end.

In back-end, like snippet previews it shows %%cf_prefix_departments%% and not the replacement. And of c no analysis is made either.

related Question 1) Is this possible to replace? And if so, what the latest API filter-hook?

The same goes with excerpt replacement on PAGES, as excerpt are in use for that post type. Using template %%excerpt%% works fine on front end (and OG:type etc etc), but in backend, the snippet preview is blank. And of c no analysis is made either.

related Question 2) Is this possible to populate? And if so, what the latest API filter-hook?

Im not using ACF custom field with glue or whatever.

Anyone; Really really thanks for straighten this out, otherwise I go nuts.
